In this episode, and for the next couple of weeks, we are going to talk about low FODMAP recipes for the holidays. I have chosen to do this so that you could get some ideas about what to prepare for those special occasions like Christmas or other special holidays that you may celebrate with your family. You may be inviting guests to your house, and if you are in charge of doing most of the cooking, you can easily prepare these low FODMAP dishes for everyone else as well and they will still taste fantastic. Alternatively, if you are invited to someone else’s home, you could bring a couple of these safe dishes and at least you will have something delicious and low FODMAP to eat.

This episode’s guest, Lee Martin, is a specialised dietitian who became part of the low FODMAP diet research team in London King's College, contributing to the research and development of the diet.
Currently, he works as a specialist gastroenterology dietitian at the University College London Hospital where he provides group education on the low FODMAP diet.
Lee has also published the book “Re-challenging and Reintroducing FODMAPs” which is the first book ever written that is completely dedicated to the reintroduction phase of the low FODMAP diet.
Lee has not been diagnosed with IBS, but suffers from functional gut symptoms and has followed the Low FODMAP diet, to understand more about the practicality of the diet and to improve his symptoms.

Debra is also the founder of FODMAP Consultancy and a diet coach, and offers not only one-to-one sessions in consulting rooms in location across South Wales, but also consultancy sessions via Skype. In addition to treat digestive disorders, Debra is also an expert on the treatment of malnutrition and weight management.

Starting off with an online store, the popularity of their low FODMAP food products prompted Chrissy and Luke to start up a café where the public can physically go to enjoy intolerance-friendly dishes. Though their emphasis is on low FODMAP and gluten-free diets, they also cater to other dietary needs.
